I used grated carrots and
also roasted red peppers.

Tonight I'm serving my Broth Braised Yukon Gold Potatoes on the side with New York strip steaks,

also see these delicate cubed potatoes served alongside chicken or fish.
It's made with

peppers, almonds, vinegar, paprika, oil, garlic, and with my own spin on it, tahini.

also really delicious with soya meatballs and

I love this basic version below, but you can
also spice it up by adding
roasted garlic,
red pepper flakes (for a spicy version), or herbs (chopped basil is my favorite).
Jarred
roasted red peppers create a speedy homemade sauce for these mini pizzas, but you can
also roast your own
red peppers to cut down on sodium.
You could
also add
red pepper flakes, garlic (though this is slightly risky as it can burn at high heat), lemon zest or Parmesan before baking, or top the
roasted asparagus with breadcrumbs and / or Parmesan, Feta or goat cheese.

roasted red peppers — you can add just about anything, truly.
I
also have a tomato allergy, so I blended a jar of
roasted red peppers in olive oil with
roasted garlic until it was slightly chunky and added some oregano.

roasted red pepper soup (courtesy of Trader Joe's soup - in - a-carton) I had on the side.

also the perfect thing to put together when you have unexpected guests over Christmas.
