Like my old beefless stew recipe, this one is loaded
with potatoes and hearty veggies, but it's
also got a nice hit of
curry powder, as well as an apple, which adds just a touch of sweetness.
Also feel free to play around
with the spices, you may or may not like the
curry powder, swap it out for some smoked paprika or Italian herbs, the options are endless!You can have these plain as is
with some sauce (hmm sriracha) or you can go all the way and be extra like me by making cheesy sweet potato fries.
I used white rice instead of brown, because it was what I had on hand... I
also chopped up and added 1/2 of a sweet potato, which I cooked
with the onions at the beginning, and some tumeric and
curry powder.
It's a lovely, filling soup — sometimes more like stew —
with lots of cabbage and flavour and spice from the
curry powder (store - bought can be used, although I've
also been making our own
with a slightly modified version of this recipe from Pecanbread.com).
It may help to decrease the spinach... you may
also want to try it

also a good source of other compounds and nutrients thought to have anti-cancer effects, like isoflavones, lignans, and vitamin B. I love lentils cooked in bone broth and mixed
with greens,
curry powder, and chicken sausage (or just the greens if you want a meatless meal).
