24 hours is never enough, we
always have lots of things to do but not much
time, especially
for cooking,
for that reason, here there is a super quick and easy lentil spinach
soup that you can make in a few minutes!
Every
time I make this
soup, I
always feel that it came to be from a misunderstanding, and that it should really be made with sunchokes, the root vegetable (otherwise known as Jerusalem artichokes, which aren't artichokes or from Jerusalem
for that matter), instead of with globe artichokes.
Since I juice all the
time, I
always have plenty of homemade, ready to go vegetable broth
for my
soups.
Before making this recipe I stuck to winter squashes
for creamy
soups but opting
for summer squash, especially this
time of year, will be much cheaper and also keep you eating seasonally which is
always a good thing.
No matter the season, it's
always a good
time for soup.
First of all, I wanted to tell you that tonhigt I made this garlic bread (
for the millionth
time) to go with tomato basil
soup and as
always, it was heavenly!!
You may not feel like eating, I usually don't, but I
always have homemade chicken
soup in the freezer
for times like this.
Good thing of living in London is that we never stop wearing sweaters:) Also, it's
always time for a good hearthy
