I cup naturally vegan cornbread mix (I use Martha White) 1 cup naturally vegan baking mix (I use Bisquick) 1 teaspoon baking powder 1 teaspoon ground cumin 1 teaspoon garlic powder 1 teaspoon dried oregano 1/2 teaspoon salt 1/2 cup vegan butter, melted 1/3 cup vegan sour cream 1 teaspoon Adobo sauce
from can of chilies in Adobo 1/3 cup non-dairy milk 1 teaspoon
apple cider vinegar 1/2 teaspoon baking soda 1 - 15.5 ounce can corn, drained 4 ounce can
sliced black olives, drained 4 ounce can chopped green chilies, mild, drained 2 green onions,
sliced 1 cup shredded vegan cheddar or Monterey Jack cheese, divided (I use So Delicious cheddar - jack blend)
Directions: Preheat oven to 400 degrees / Butter a baking dish / Melt 2 T butter in large skillet on medium heat / Add onions, rosemary and salt and saute until onions are tender and are beginning to color, about 10 minutes / Add remaining 2T butter,
apple cider to skillet and stir to combine / Bring to a boil, then remove
from heat and let it cool down slightly / Combine
sliced potatoes,
apples, and onion mixture in large bowl, toss gently to blend / Transfer to baking dish, cover with foil and bake 40 minutes or until potatoes are tender / Remove foil, sprinkle with grated cheese and continue to bake until the top browns, about 10 — 15 minutes longer / Let stand 15 minutes before serving.
Oh — and here's another decorating idea
from my daughter — I candied some
apple slices and made a crescent shape along one side of the top of the cake with the
apple slices cascading down the side.
The best way I've found once the
apple is peeled and cored is to cut the
apple into thirds downwards
from top to bottom and then
slice across.
One trick I learned
from my mom was to store the cookies with a
slice of an
apple to keep them
from getting too hard.
Well... I started with a vanilla base recipe
from Bon Appetit, and added
sliced apple pie
from Costco.
I
slice up the
apples before I pick up the kids
from school and then zap the peanut butter when we get home.
Cut the third
apple from blossom to stem into

1) Mix flour, butter and icing sugar in a bowl using two knives to cut the butter until the mixture resembles fine breadcrumbs 2) Add in the egg yolks and vanilla extracts and mix well, then add iced water until the dough starts to come together 3) Shape the dough into a ball on a cool, flat, floured surface 4) Flatten dough into a disc and then wrap in plastic wrap, and chill in the refrigerator for at least 30 minutes 5) Meanwhile, peel, core and
slice the
apples into as thin
slices as possible 6) Mix sugar and ground cinnamon powder with
sliced apples and let it rest for a while 7) Pre-heat oven to 180 deg cel 8) Once dough has chilled, roll pastry dough on a sheet of parchment paper until it has expanded to the size of the tart mold (I used a rough mold the size of a large pizza) 9) Leaving at least an inch of dough free, arrange
apple slices by overlapping them slightly in the shape of a circle, starting
from the outermost part of the circle, until you reach the inside 10) Fold the edges of dough over the filling and then sprinkle the dough with a bit of sugar 11) Bake for about 40 - 45 minutes, or until the crust is golden brown and the
apples are soft 12) Serve warm, with a side of whipped cream or ice cream (optional)
Some alterations: I used yellow split pea instead, minced garlic
from a jar instead of cloves, added
slices of yellow cucumbers (cross pollination with lemon cucumbers
from my garden), and I marinated the ham hocks with
apple cider vinegar before placement into the slow cooker.
Still warm
from the oven, the bars are a marriage between
apple pie and an
apple crisp, the
apple slices crumpling into a velvety layer beneath the sweet brown sugar crumble topping, the caramel melding into the bottom crust and saturating the whole mess with flavor.
Halve the lemon and squeeze half onto the
apple slices to keep them
from turning brown.
I typically eat it straight
from the jar with a spoon, but it's also delicious melted and mixed with fruit (mashed banana, berries, microwaved
apple slices), mashed into sweet potatoes, stirred into oatmeal, and incorporated into baked goods (there are lots of recipes on the Nikki's website) as well as no - bake desserts (favorites: No - Bake Vanilla Cake Batter Bars and No - Bake Almond Joy Cookies).
