tarts since my pate brisee recipe (martha) yields 2, and used bellflower
apples from our tree; their not very good eating
apples, but so good
for baking.
A delicious, easy
apple tart, and the crust is to DIE
for.
On another note I made the
apple mosaic
tart with salted caramel glaze last night
for a party and it came out absolutely beautifully.
I've also used some leftover caramels and melted them and used them
for the caramel glaze of the
apple mosaic
tart (that I've also made a million times), so you can say it's a dual purpose recipe
for me!
Cinnamon - chocolate fruit mince
tarts slightly adapted from Australian Gourmet Traveller 270g dark brown sugar 300g raisins 300g dried cranberries 3 tablespoons brandy 100g unsalted butter, melted 100g glacé orange, finely chopped 2 Granny Smith
apples, coarsely grated 1 orange, finely grated zest and juice 1/2 teaspoon ground cinnamon 1/4 teaspoon ground cloves 1/4 teaspoon ground ginger 1/4 teaspoon freshly grated nutmeg 1 vanilla bean, halved lengthwise, seeds scraped 100g dark chocolate (70 % cocoa solids), coarsely chopped 1 1/2 tablespoons demerara sugar,
for scattering Cinnamon pastry: 180g softened unsalted butter 200g pure icing sugar, sifted 1 tablespoon ground cinnamon 4 eggs 500g all purpose flour pinch of salt Combine all ingredients except chocolate and demerara sugar in a large bowl, stir to combine, then spoon into sterilized jars * and refrigerate
for at least 1 day or up to 2 weeks, inverting jar occasionally.
We didn't use salt or lime, and
for dressing, we used extra virgin olive oil and raw
apple cider vinegar (my husband's favorite)... what a delicious and refreshing
tart - sweet combo!
It's best to use a firm -
tart variety of
apple for this, such as Granny Smiths, but any
apple you enjoy will work.
** To prevent soggy muffins use
tart apples good
for baking, such as Baldwin, Braeburn, Cortland, Fuji, Gala or Granny Smith.
Make sure you use some
tart apples for the soup.
Use it
for super easy sweet desserts, like the open
apple tart you see above.
Directions: Peel and slice
apples (yellow transparents tend to cook down so I made my really chunky) / Fill bottom crust half - way with
apples / Sprinkle with some of the sugar and cinnamon / Continue to fill with
apples creating a mound on top / Sprinkle with the rest of the sugar and cinnamon — I didn't use the full 1/2 cup sugar on mine because I like it
tart / Cover with the second crust, pinching the edges and cutting some slits in the top / Bake at 425
for 15 minutes and then turn heat down to 350
for another 40 - 45 minutes until golden brown.
But, you may use any firm, slightly
tart apple for this recipe.
