I'm looking forward to fall leaves,
pumpkins (
and all the things that can be
made with
pumpkins),
apple picking,
and cider donuts.
These healthy vegan baked doughnuts are
made with coconut oil,
pumpkin,
apple cider, coconut sugar
and einkorn flour — which is very similar to white spelt flour in baking.
I grew up with my mom
making homemade
apple crumb, cherry,
and pumpkin pie from scratch every holiday.
I
made 4 batches of wholesome
and healthy crisp bread (a perfect pregnant - snack)
and a warm, sweet
and spicy
pumpkin soup with caramelised
apples, crispy serrano
and popped, roasted
pumpkin seeds...
and luckily they loved it!
I
made these this morning according to the recipe
and they were good, but not as flavorful as I liked, so I
made a second batch
and added puréed
pumpkin along with the
apple sauce, some walnuts, raisins
and apple pie spice
and OMG!!!
The air is crisp
and at least in the U.S. something
makes us all think of
pumpkins,
apples and the like.
The first time I
made the soup I matched the
pumpkin with parsnip, carrots
and apples.
Fruit & Veggie Packed Mini Muffins
makes 4 1/2 dozen mini muffins 2 eggs 1 C sugar 1/2 C vegetable oil 1 C applesauce (unsweetened / no sugar added kind) 1 C steamed
and pureed winter squash (butternut or acorn work well) 3 C flour 1 Tbsp
pumpkin pie spice 1 tsp baking soda 1/2 tsp salt 1 1/2 Tbsp ground flax seeds 1 C shredded carrots 1 large Granny Smith
apple, peeled
and shredded 2/3 C raisins
Not only will you love the sweetness of the
