I decided this year to use faux apples from Pier One because the real ones turn into
applesauce if you keep the lid on!

If you do not have or can not find soy yogurt try doubling the
applesauce, adding a small mashed banana, or simply omit it altogether and add soy or almond milk a tsp at a time (after all the ingredients are combined) until you reach the desired consistency.

If they didn't taste exactly like the healthy cookies I made with

applesauce I would have used that instead and 1/3 cup Coconut flour.
If you like your
applesauce smooth, you can puree it with an immersion blender.
In the same cup (or transfer to a small bowl

applesauce, maple syrup, vanilla, tahini and lemon zest.
Adding either of these ingredients will give the cake added flavor and moisture so,
if you like, add 1/2 cup (120 ml) of either crushed pineapple or
applesauce to the batter, right along with the oil and vanilla extract.
I haven't made that sub myself so I'm not sure how it'll affect the texture but I'd recommend only replacing half with
applesauce or maybe even trying prune puree
if you have it — that should keep the texture fairly similar.
