I noticed that it requires unsweetened applesauce; how does
the applesauce work in this recipe and can I substitute with something else?

applesauce, mashed bananas, and pumpkin to replace eggs, but generally those only really
work in sweet
recipes.

recipe (I use a no sugar added version from Trader Joe's), but
in the past I've had success replacing
applesauce with mashed bananas, gram for gram, and vice versa.
It seems to
work best when there is another oily presence
in the
recipe - which is why I think an
applesauce substitution may
work here - since oily peanut butter is already
in the
recipe.
