Well, it's all thanks to a new discovery called «
Aquafaba «which is
just the water from a can of chickpeas or other legume.
I actually
just came across that mayo for the first time today at my health food store, it's so funny to see
aquafaba popping up on ingredient lists when I feel like 2 years ago no one even knew what it was Looking forward to the rest of the pantry parts to come!

aquafaba by itself in step 3.

just be «beat
aquafaba» without the sugar or do you split the sugar and use some for step 3 and some for step 4?
(I tried this recipe with straight
aquafaba, and the pancakes were much less fluffy, and that
just doesn't work for me!)

just switch out the coconut oil with Earth balance spread (and reduce the salt to 1/4 tsp), and then chickpea liquid (
aquafaba) instead of almond milk!
This recipe
just needs the
aquafaba straight from a can.
After
just a couple of minutes it will thicken and be ready for the
aquafaba.

When you whip the
aquafaba with a hand mixer it gets light and foamy
just like egg whites, making it a great substitution for eggs.

just a touch of oil.
Add the shredded Brussels sprouts to the bowl along with the rest of the
aquafaba mixture (this is
just to ensure the salt and
aquafaba are distributed evenly), and stir to combine with the potatoes.
Aquafaba translates to bean water, and it is
just that.
If you'd like a thinner consistency,
just add a bit more
aquafaba or water until it's your desired consistency.
