I took my Sour Cream Vanilla Cupcakes
as a starting point and tweaked them to make them more like a muffin and added
orange extract and
cranberries.
I made the
cranberry orange pecan muffins (or something like that) from Vegan Brunch today — they are cooling
as I write this... I am going to try scones next!
Like you I love
cranberry orange muffins we have them at work and every time I see one I grab them I have been recently switching to the Paleo diet and found your recipe for blueberry muffin bites and I made them they're wonderful but still my craving for the
orange cranberry muffins out way the blueberry muffins so I altered your recipe a bit I used
cranberries instead of blueberries and an
orange instead of a lemon and boy it turned out just
as wonderful
as the blueberry muffin bites thank you for posting your recipe my family is enjoying all of the yummy goodies I am making
I subbed maple syrup for the honey
as I am following a strict fodmap diet... and added some
orange peel along with the
cranberries.

As I checked the ingredients in my cupboard, I found a bit of crystallized
orange peel left from my holiday baking and right next to it I saw a jar of dried
cranberries — I immediately thought of putting them together in cookies, and added a bit of dark chocolate for balance.

as I believe its a more natural, unrefined sweetner (agave isnt as innocent as you might think — read up about it) As for those of you who wanted to know about the white choc chips, well I avoid all dairy and refined sugars so I simply made my own, its dead easy — simply combine pure raw cacao butter (gently melted) with a pinch of celtic salt, a little extract of vanilla and some raw cashew butter, then freeze in a suitable container before breaking into chunks!!!!! yummy You can make dark chocolate chips even easier by melting pure coconut oil and stirring in a little vanilla, honey and raw cacao powder before freezing!

I left out the raisins and
cranberries, and changed the dressing
as follows: 1 T rice vinegar, 2 T lime juice, 2 T
orange juice.

Hi Marsha, I would minimize juices on the low FODMAP diet overall — a splash of

orange juice should be okay — but wouldn't go for a big cup full
as it tends to contain a big fructose load.
My recipe is
as follows: 1/2 cup frozen
cranberries, two small dates (the only sweetener I use) 1/2 cup liquid (sometimes water, sometimes
orange juice) sprig of mint (essential for the marvelous flavor it adds) I even added some blueberries this morning.
