as to not abuse any single one In my humble opinion, rotating foods is really important and I am confident I didn't have an
almond sensitivity before I decided to take on eating
almond flour baked goods
as if I was training for an Olympic sport.
While I often prefer the texture of
almond flour for baking, I think it is good to alternate and use a variety
as to not develop
sensitivities to frequently eaten foods.
I adore baking gluten free (I have a
sensitivity to wheat, ugh) with
almond meal / flour, buckwheat, millet, sorghum and teff
as I try to use more of the protein flours and stay away from the rice flours due to higher glycemic index / load values (lectins, too) but use the starch flours sparingly.
