avocado ranch is good for basically anything — burgers, topping a taco salad, chicken, roasted veggies, raw veggies, and really whatever else your little heart desires.
Arrange
as you would nacho chips, then top
with salsa, black beans, peppers and onions, jalapeno, and
avocado.
As for the hight issue, I would guess it just has to do
with the difference in the size of
avocados we used.

While I once scoffed at a bin filled to the brim
