Cabbage dominates in the most familiar versions, but other ingredients such
as daikon radish, carrots, and other vegetables may be included as well, with varying degrees of spiciness.
Kimchi is fermented cabbage and other vegetables such
as daikon and scallions — kind of a Korean cole slaw — boldly flavored with the likes of fish sauce, red pepper, ginger, and garlic, all of which contribute heat and a fiery tint to the soup broth.
If you want to omit some of the ingredients below, feel free, although I would recommend simply adjusting the amounts to your taste and even adding some ingredients such
as daikon radish and pear.
Finally I added a shredded carrot,
as my daikon was not that big, and I squeezed a lime over everything when I mixed it all up.
