What a mistake that was though
as baking them whole — just like a
jacket potato — is seriously awesome.
Each diner received a massive plate that included a
jacket potato, souvlaki meat of your choice such
as beef, chicken or pork, a corn on the cob and a small portion of rice.
It's rich, creamy, high in protein and can be served so many ways —
as an appetiser with pita chips, crisps or crudites;
as a sandwich spread; smeared all over a
jacket potato,
as a sauce for pasta, in a Buddha Bowl, or even
as a main course — just top it with olives, chopped tomatoes, cashews and whatever else you fancy, and served with hot Arabic bread to dip.
Firstly, don't be overwhelmed if your first few months of diagnosis will be spent eating
jacket potato's — remember the humble
jacket potato is your friend when you start this journey,
as well
as salads and chocolate brownies (shops / cafes are slowly realising GF cakes don't have to just be brownies...)
Leave the skins on
potatoes where possible, such
as for
jacket potatoes or wedges.
