Maybe it's just me, but I think listing unique ingredients
as kind of a salad catch - all might be a better idea than listing 20 salads (this one with nuts, this one without, etc.).
But dried tofu, whose flavor is concentrated and often smoky, is incredible cold,
as a kind of salad tossed with chili oil, vinegar, thinly sliced celery, crushed peanuts, and maybe even a little white sugar.
