These are moist and soft and my elementary school aged kids liked them, but definitely not as
good as muffins made with flour.

as muffin top issues - there's so many gorgeous swing tops around these days.
Finally somebody who likes a rustic and muffin - y muffin compared to cupcakes or cake
disguised as muffins....
These recipes may be divided and made into smaller cakes as well
as muffins if you decide to make a cake just for baby.
That being said, if you leave the frosting off, these can serve
as muffins for a wonderful fall breakfast.
I'm not sure exactly how long you'd need to increase the baking time, but as
long as the muffins pass the toothpick test, they should be ready.

With only two tablespoons of sweetener, these definitely
qualify as a muffin, NOT a cupcake, but my kids all love them and don't complain.
