Therefore, I made it my mission to develop a gluten free muffin that was just as good
as a normal muffin!
But I do want to warn you and let you know that they, of course, don't have the same texture
as a normal muffin.

But fear not and don't go rushing out to buy a new
muffin pan, these are just
as delicious when baked in
normal muffin pans.
If I'm serving these to guests I like to make them in
normal sized
muffin tins but they can also be made into mini
muffins and served
as finger food for dessert.
Muffins are an exception to my
normal baking protocol,
as I make them quite a bit, and try to keep them on the lighter side so we don't feel to bad about snacking on them.
And by the way, grain - based foods like bread, cereal,
muffins, pasta, and bagels are a big culprit in causing internal inflammation and disrupting
normal gut function, so avoid grains
as much
as possible.
