This is kind of an emergency
as I plan on making this pie tomorrow for Christmas I live in a remote place where I can't find either
psyllium husk powder or arrowroot
powder.
but all recipes in the booklet are with cow's milk and I don't know where to start nor what bacteria to add and where to get them... I might enquire at the shop

I use a quarter - to a half - teaspoon
psyllium seed
husk powder (believe it or not)
as a substitute.
Although it is typically known
as a laxative,
psyllium husk powder also carries other health benefits.
This recipe also features
psyllium husks powder, which serves
as a thickening agent to make the mixture creamier (and packs fiber to help ease digestive issues).
I am going to revise what I state here — I realize that some whole
psyllium husks are listed
as «
powder» and that is perfect for use here.
Chia seed gel is good
as an egg replacer in my experience (for recipes with flour, not almond meal etc.), but
psyllium husk powder appears to be even better!
Xanthan gum,
psyllium husk powder, and guar gum are frequently called for in gluten - free recipes and serve the same general purpose

By the way, if you can't find the
psyllium husk version,
psyllium powder will work too (try 2 tablespoons instead of 3
as it's finer than the
husk).
