I added some fresh cherry tomatoes on the side

I went to Whole Foods and unfortunately they didn't have the Hokkaido
pumpkin so after talking to the produce person I used 2 acorn squashes
as they are good for filling /
baking.
I was browsing through the Recipe Archives myself and blown away by such amazing recipes
as Pumpkin Ravioli with Sage Butter and Mushroom Bechamel,,
Baked Camembert in Filo with Cranberry Chutney, Vermont Country Inn
Pumpkin Cheesecake, Canned Cranberry Sauce Bundt Cake, Cranberry Sally Lund or Brioche Americana, and Cranberry Orange Iced Sweet Tea just to name some things that immediately caught my eye and appetite.
You can also use pureed
pumpkin as a replacement for both the eggs and the oil in brownies (if using a boxed mix, just add a can of
pumpkin puree and
bake as directed).
I lightly toasted the cubes of
pumpkin bread just
as I did with the french toast
bake, and the bread really holds up well and adds the perfect amount of sweet, warm spices.

Here's what I changed: I used a 15 - oz can of
pumpkin (not pie filling — just
pumpkin puree) in place of the bananas; I swapped out the spices for about 1 tsp each of cinnamon and ginger, and mixed those in with the
pumpkin first; I opted for the larger volume of maple syrup from the original recipe,
as the
pumpkin wouldn't contribute sweetness the way the bananas do; I
baked the batter
as a dozen standard muffins, which took about 20 minutes at 350.
Bake everything for about an hour, and enjoy some delicious cooked
pumpkin as you scoop your delicious rice casserole out.

As the holidays approach, it seems nearly every
baked good has some variation on the
pumpkin spice theme.
For my Vegan
Pumpkin Pie, and other no -
bake custard fillings that firm in the refrigerator, you'll want to
bake this Nut - Free Egg - Free Pie Crust for 13 - 18 minutes
as directed above, until it's golden brown.
As always, Cook's Illustrated had a very elaborate
baking technique that resulted in a balanced, caramelized sweetness that was chock - full of depth — one of the best
pumpkin bread flavors in my opinion.
The cookies are fabulous this way,
