I am now anxious about whether I should go gluten free again but increase safe starches (my mother has a little bit of arthritis, I have suffered from rosacea and canker sores in the past - both cleared up on a traditional WAPF diet with limited prepared grains such

Pumpernickel rye bread isn't as dense and doughy

Fold the dough, you won't get far with kneading

There's far too much written about
sourdough that makes it sound mysterious and hard to master, I think you've done a great job of demystifying it:) I feed my starter
as and when I remember; I don't throw any away; I feed it sufficient to create the amount I need when I make a loaf; I pretty much chuck my loaves together, fold the dough regularly for a few hours, then leave it to prove before baking.
While I strongly feel that you can make an authentic San Francisco
Sourdough style bread anywhere, I also feel that if it isn't made in San Francisco, it shouldn't be called a San Francisco
Sourdough Bread, just
as if it isn't made in a small region of France, that sparkling wine shouldn't be called Champagne.
As for my favorite bread: Homemade whole wheat wild yeast
sourdough.
Other than maybe a metaphorical similarity between the time it takes a
sourdough starter to develop it's flavor for its addition to a classic recipe such
as banana nut bread and myself aging from 16 and 30 years old (although hopefully without a smell) yet still enjoying the music of my youth.

Although I finally learned the art of
sourdough last year, my starter often goes into hibernation
as life gets so busy
as a freelance chef instructor and since I live alone, it takes a while for me to visit a loaf of bread, even if I often share with others.
Perfect to top a slice of slightly toasted
sourdough smeared with goat cheese and maybe a spot of pesto — in fact that's exactly what my 16 year old son requested for his birthday dinner in January (they froze fairly well, but not
as good
as freshly made).
