as the zucchini starts growing in my garden it I start adding it to everything.

I know... I threw a curve ball there but I needed to make this in a loaf pan because this one
started out
as a traditional
zucchini bread recipe.
I
started with the Tomato - Mozzarella Caprese instead of a salad and added the Grilled
Zucchini and Squash
as a side to my meal.
Once the
zucchini is done, add it along with all of the remaining ingredients (
start with 3/4 cup water and add
as needed, stopping at 1 cup) to your blender and blend until smooth.
I first tried this recipe during the summer so they
started out
as zucchini brownies but since summer squash is no longer in season, I thought I'd substitute grated beets and carrots.
As a pie lover, I wasn't really feeling the loss, but when my wife
started making puppy dog eyes at me before a busy week of trial (for her), my mind went straight to that
zucchini in the fridge and the container of cocoa powder in the cabinet.

If at any point during the cooking, liquid
starts to accumulate in the pan
as it cooks off of the
zucchini or mushrooms, carefully pour the liquid off.
I
started by eating endless amounts of green veggies (ask anyone that knows me — I've got a
zucchini in my bag at all times), lots of healthy fats like extra-virgin olive oil and avocado along with lean proteins and healthy carbohydrates from sweet potatoes and gluten - free whole grains such
as millet, quinoa and black rice.
I always make up some frozen
zucchini to have on hand for luscious thick smoothies, especially
as the weather
starts getting warmer!
They
started as a way to use up the extra garden abidance of
zucchini this season, but now they have turned into a regular favourite!
I
started at 6mo with solids, one item at a time for 2 - 3 days (avocado,
zucchini, pear), increased varieties
as we went on.
