as I love a
traditional baked
cheesecake — since summer is on its way I figured it was time to make a no bake lemon
cheesecake.
I don't know if I have ever had it except
as a raw
cheesecake from Naked Sprout (which doesn't really count
as traditional pumpkin pie).
This is
as good if not better than
traditional non vegan
cheesecake.
Coconut oil and raw cacao butter replace the eggs of a
traditional cheesecake and act
as the binding and setting agents for the
cheesecake filling.
But
as I've cleaned up my diet, I can't even take a bite of the
traditional cheesecake anymore without feeling sick... It's usually way too sweet for me, and the ingredients turn my stomach into knots.
Traditional cheesecakes can be tedious to make, requiring complicated cooking techniques like water baths
as well
as slow and long baking time.
It is by its nature a denser textured base than a
traditional cheesecake, and
as such needs to be thin and is best balanced out by a thick frozen
cheesecake filling though also very good unfrozen also.
