Lacking that, if the product lists whole

as the first ingredient yet is light in color, it has very likely been made with whole
white wheat.

If you sift the whole
wheat flour once or twice to get out the larger pieces of bran, it bakes up
as nicely
as white flour for all except the lightest baking recipes.
