The main difference is that I keep the coconut on it's side as I'm cutting into the actual coconut shell (beyond the woody
husk), which keeps the knife
at the right angle to break into it quickly.
It holds together incredibly well, but is not stretchy or chewy
at all (which, working with psyllium
husks for the first time, made me raise a skeptical eyebrow
