Your toolbars and tabs will remain
at their default font.
I have my controls set
at the default font size, but with the fewest words per line, giving a nice margin to the page of text.

The
default in Word,
at least, when you do that is Calibre Light, blue
font color in
font size 16.
Reason I ask is that it seems as if Georgia is the
default font for a lot of devices (
at least from using the kindle previewer) and Georgia causes some numbers to go beneath the line (e.g. 3).
The
font choice isn't too big a deal, to me
at least, but the
default margin that you're stuck with is basically non-existent and smaller
fonts don't stand out enough compared to the competition.
New
fonts designed for e-reading are all the rage
at present, with Amazon launching bespoke slab serif Bookerly and now, surprisingly, Google Play Books springing specially designed Literata as the
default typeface on its app.
So now we're looking
at default settings for paragraphs; not
font, but paragraphs.
When it comes to choosing a
font, many job seekers
default to Times New Roman, but
ATS doesn't like that
font any more than I do (it's so boring and old school).
