I decided to make an attempt
at egg muffins, which I really enjoyed.
Not exact matches
I actually developed a
muffin recipe using an extra
egg yolk for a friend of mine who didn't have access to gums
at all.
Pulling out the calculator you can figure that the sugar is 55 % of the flours, equaling 170 g,
eggs at 32 % would be 100g (or two large
eggs), liquid (the milk and lemon juice)
at 70 % would be 220g, and the fat (butter)
at 37 % would be 113 g. It's a specific ratio, but it worked for this jam filled
muffin, and I was happy with the results.
- Preheat oven to 350 degrees and line 1 pan of regular
muffin tins and 1 pan of mini
muffin tins with cupcake liners (I only used 8 regular sized and 8 mini
muffins for the bouquet)- Add the cake mix, buttermilk, oil, almond extract, and vanilla extract to an electric mixer and mix on medium for 30 seconds - Add
eggs one
at a time and beat until well mixed - Turn mixer to high and beat for another 2 minutes - Fill liners about 2/3 full with batter - Bake for 15 - 20 minutes, or until cake tester comes out clean - Allow cupcakes to cool while preparing the cream cheese frosting
Lately I've been making a big batch of scrambled
egg muffins on the weekend for little man to enjoy for breakfast
at school.
Without any hesitation
at all, I pulled out butter,
eggs, and flour, to make quick and easy blueberry
muffins.
Our go to quick brkfst is green smoothies with mini-muffin coconut flour pancakes (make 24 pancakes
at once), or make ahead
egg muffins cold from the fridge!

At home, I love serving up a variety of options from granola and yogurt to healthier
muffins, French toast,
egg dishes, and vegetable salads and sides.
1) 3 cups almond flour 2) 3 large
eggs 3) 1/2 cup honey 4) 1/2 cup butter or ghee or coconut oil
at room temperature — extra for greasing if not using paper
muffin molds 5) 1 tablespoon of orange zest 6) 2 teaspoons of baking powder 7) A pinch of salt 8) 1/2 cup of slivered almonds

muffin tray, and place round baking paper circles

muffin moulds until slightly above 3/4 of mould is filled 7) Bake in pre-heated oven
at 175 deg for 15 to 20 minutes (or until a toothpick comes out dry when poked into
muffins) 8) Let the
muffins cool then cut them into halfs horizontally 9) Spread dulce de leche on the bottom half, and sandwich with the top half 10) Sprinkle the mini cakes with sifted icing sugar
I used 6
eggs and
at the end of 30 minutes one
egg had cracked and the shells of the
eggs were slightly brown in spots — maybe from hot spots on my well used
muffin tins?
After a run and an upper body strength workout
at the gym, I came home and had three
egg muffins and some avocado slices.
