One last thing, expect yet another attempt
at me veganizing Bordeaux cookies.

Most recently, we convened
at the Gelpi's lovely home to cook and consume a delightful fiesta of homemade pico, guacamole and chips with Coronoas shots of tequila (for Juan and me — my first in my entire life, late bloomer that I am), tortilla soup with roasted pepitas —
veganized from a recipe my mother got from the Mansion on Turtle Creek in Dallas — Juan's seitan mole over herbed rice, homemade tortillas, and, for dessert, Barbara's apple - oatmeal crisp and my flan.
I got the recipe from my friend Brett
at work, and with two eggs and a stick and a half of butter, I never expected it to
veganize as well as it did.
It wasn't difficult to
veganize this recipe
at all, and the result is sure to appeal to just about anyone with a sweet tooth.
At one of my favorite izakayas here in Honolulu, they have a ton of delicious menu items like Teriyaki Creme Tofu (which I
veganized here), Spicy Tofu, great custom veggie rolls, and Nori - chos (tempura - fried nori dressed up like nachos.
After a failed attempt to
veganize a local favorite baked good (not telling what it is, still working on it for next time), I was
at a loss for what to make for my column this week.
This can put me
at a bit of a disadvantage when I'm developing
veganized versions of seafood recipes.
Just in case Kaylee doesn't see this before you make it, I'm going to guess
at two eggs, and maybe reduce the amount of soy or almond milk to about 2 or 3 tablespoons - usually when I'm
veganizing a recipe I swap 1 tablespoon of flax + 2 or 3 tablespoons of liquid for each egg, so this would be the inverse of that.
My favorite healthy baked goods would be any
veganized muffin with whole grains; one of my ultimate favorites that is much lower in calories than its traditional counterpart is the Gingerbread Millet Muffin —
at only 160 calories and with whole grain Millet goodness it is a Breakfast Winner!
So I knew
at some point I needed to
veganize it for him.
