as I used pumpkin seeds instead of sunflower seeds) but I have to say the mango chilli dressing is by far the BEST
salad dressing I have EVER tasted!
As you all loved the
avocado potato
salad I posted a few weeks ago I thought I should share another lovely potato recipe for summer
salads and feasts.
One of the most interesting fruits is the aguacate [
avocado], which resembles an enormous green pear, the inside of which is like butter, is almost tasteless, and is frequently used
as a natural
salad dressing.
There are also several ready - made lunch and dinner options such
as chicken -
avocado Caesar
salad and beef stir - fry.
Just
as with my chipotle ranch dip, this
avocado ranch is good for basically anything — burgers, topping a taco
salad, chicken, roasted veggies, raw veggies, and really whatever else your little heart desires.
I'm calling this a Mexican
salad as I am using some of the traditional ingredients including corn and
avocado and the sauce is a creamy and spicy chipotle pepper dressing.
I don't have a reason
as to why I added
avocado except I can't not eat
avocado in a
salad, duh.
I love roasted carrots
as a side dish (sometimes I eat a big bowl of them for a week straight) and I love
avocados on a romaine
salad.
I do caution that once
avocado is in a
salad it won't work
as left overs.

salad though — always overestimating how hungry I am and spending hours feeling stuffed afterwards — thanks to the filling aspect of both
avocados and chickpeas.

as you've got the pesto ready) so I can't imagine why you wouldn't just assemble this the day of!
