Here's the formula I've discovered for making
salads that I don't hate: some kind of greens, preferably fresh from the farm + something sweet (usually fruit) + something crunchy (often nuts) + something creamy like
avocado or cheese + plenty of pops of color + a flavorful dressing that's
just tart enough.
Just had them in a chopped
salad with crunchy iceberg, leftover eggplant bacon,
avocado, fresh ground pepper, and a quick dressing made from Vegenaise, chile vinegar, and a touch of Hoisin.
You can make the
salad component ahead of time, them spit and pit and fill the
avocado just before eating.
Since I purchased a food processor I have become obsessed with making vegan spinach basil pesto — not
just for this
avocado chickpea
salad but also for my
avocado pesto egg stuffed tomatoes (which makes for the best gluten free dairy free appetizer).
I mean,
just when I thought I'd done everything worth doing with carrots — shredding them into my favorite carrot
