Early Saturday morning, September 9, 2017, I took my delicious Canyon Coffee with almond milk, a smoothie, and
some avocado toast topped with microgreens over to the backstage area to prep the day's speakers for their talks on the main stage.
I was used to eating takeout, like Caesar salads doused in dressing and thick slices of
avocado toast topped with tons of cheese, but thanks to the program, I learned that those seemingly «healthy» dishes were actually full of calories.

top, there's a delicious recipe in my second book with lemon juice and chilli.
However, if you have diabetes / pre-diabetes and you are including bananas as part of a whole meal then I would just balance them with some healthy fat (

Well, it is, but I thought - what about taking that
avocado, smashing it onto some
toasted bread and cutting it into croutons to be floated on
top of the soup?
Top the salad with
avocado slices and sliced
toasted almonds and salt and pepper to taste.
Spread some coconut brown rice across a sheet of nori,
top with some cooked beans, add sliced
avocado, some of the chile relish, and some crispy fried shallots, or
toasted almonds (something crunchy).
Lately, I've been slathering it on
toast and
topping it off with
avocado slices, a drizzle of tahini, a squeeze of lemon juice, and sea salt.
They can be
toasted by the half - dozen on a baking sheet set under a broiler, and served with a variety of
toppings like thinly sliced meat or smoked salmon; cream cheese, goat cheese, sliced cheddar cheese or ricotta; and fun, flavourful additions like sprouts, sliced
avocado, tomato, cucumber, radish and capers.
Smear some
avocado on either a toritllA wrap or bread and add a scrambled egg on
top, I also like to add pre chopped veggies to it (tomatoes, bell pepper) and
toast for a minutes, wrap in foil and woilaa!
Whole grain slices of french bread are
toasted to perfection and
topped with smashed
avocado and a garlicky tomato basil mixture.
Many mornings I keep it simple with sprouted grain
toast topped with smashed
avocado and hot sauce or sriracha.
Spread smashed
avocado mixture onto each slice of
toast, then generously spoon tomato
topping on
top.
It's
topped with a crunchy cabbage slaw,
avocado and my favorite thing ever,
toasted Chipotle Maple Pecans.
Whole wheat
toast topped with lightly - seasoned, mashed
avocado and a poached egg makes a delicious, satisfying breakfast.
Sprinkled on
top of
avocado toast, or a tablespoon thrown in to my morning oatmeal / granola is how I usually enjoy my hemp hearts.
Top with sliced
avocado,
toasted pepitas or sunflower seeds, cilantro leaves and tender stems, and / or sliced fresh chile peppers.
Divide the
avocado across the 2 lightly
toasted bagel halves and
top with your minty cottage cheese.

Try mashing
avocado, ricotta or peas onto
toast, then
topping with a swirl of ribbons for an elegant, easy appetizer or lunch.
7) to assemble the burgers,
toast your buns, spread a layer of mustard sauce,
top with patty, then layer with sliced
avocado and radicchio slaw.
Wasa crispbreads / crackers are also a great option for snacks, not just in this strawberry yogurt parfait but as a base to
top with whatever your mind can come up with — we had some with mashed
avocado yesterday for a kind of
avocado toast without the need to
toast the bread.
Place the
avocado slices on
top of
toasted bread and sprinkle lightly with another light pinch of kosher salt.
I toss these on
top of some wilted greens, risotto, slices of
avocado, or (if it's a Sunday) buttered
toast — Your carrot / harissa salad, with feta and mint, or some variation of shredded veggies and this same general dressing (broccoli stems, cabbage, etc)-- Lots of salads with lemon / garlic / olive oil vinaigrette, feta, almonds or nuts.
Once bread is
toasted,
top with the
avocado mash from step two and sprinkle each slice with pomegranate seeds.
This salad is ridiculously simple to make and is one of my favourite fall combinations: Pumpkin + pomegranate +
toasted pecans +
avocado all sitting on a bed of kale, and
topped with a sprinkling of seeds, warm tempeh and a tangy balsamic vinaigrette.

Top each slice of
toasted bread with 2 or 3 of the reserved
avocado slices.
Spiralizing makes quick work of preparing the beets for fermenting and they look super cool tossed into salads, soups, grain bowls and on
top of
avocado toast.

topped with seasoned jackfruit, salsa, vegan cheese sauce, diced red onion, fresh
avocado, tomatoes, and shredded lettuce.
I stuffed the squash into freshly
toasted corn tortillas that were
topped with shaved crunchy cabbage, creamy
avocado, vibrant radish slices, fragrant cilantro, spicy raw jalapeno and salty queso fresco cheese.
