Basically, it's a healthy way of eating because
you avoid white starches, sugar and dense carbs.

I have been eating and loving Dr Praeger's Potato - crusted Fish Sticks, but now that I'm doing a lower - carb diet where I'm trying to
avoid white potatoes as well as refined grains and
starches, they aren't the best for me.
Starchy vegetables — it's best to
avoid white potatoes and other similar vegetables which are higher in
starch and lower in nutritional value.
Also, as a side note,
white flours and other stripped
starches (also frequently found in processed foods) function similarly to sugar due to their «skeletonized» state; they are also best
avoided for all the same reasons previously mentioned.
We should all eat whole foods with minimal processing,
avoid added sugars, and pay attention to reducing glycemic loads by choosing lower glycemic index
starches (whole grains, legumes & sweet potatoes rather than baked goods and
white rice).
However, I would
avoid white potatoes as they are very high in
starch and can cause blood sugar imbalances because of the way they are metabolized in the body.
Previously my menu was also quite low carb,
avoiding sugars,
starches and
white flour.
