Spinach Mango & Pepitas Salad with Maple Syrup & Lime Vinaigrette For the Salad:
Toss together
Baby Spinach,
Arugula Greens, sliced Cucumber, chopped Red Pepper, Pomegranate Seeds and Mango pieces.
Made as per the recipe except used mixed
baby greens for the
arugula because it was in my fridge and a basil - infused olive oil to
toss the greens.
Plate up the grilled vegetables, and
toss over the raw asparagus / scallion salad, with a handful of
baby arugula and chopped cherry tomatoes.

baby beets,
arugula, feta cheese, walnuts, all
tossed in a richly flavored shallot vinaigrette.

Place the
baby arugula in a large serving bowl with the cheese; add the strawberries, red onion, and balsamic dressing, and
toss gently until just coated.
