of baby bella mushrooms, and then mixed one cup of beef broth with 1 teaspoon cornstarch, salt, pepper and 1/2 a teaspoon of creole seasoning (I like a bit of spice!)
Anyway, today I'm sharing this recipe for pasta frittata
with baby bella mushrooms and broccoli rabe over on Healthy Aperture for my monthly Food Rx column.
Other «customizations» include adding mini cheese ravioli or tortellini (I like the whole wheat, frozen ones),
using baby bella mushrooms instead of white mushrooms, and using other veggies like squash, potatoes, green beans, leeks, and carrots.
I subbed sauteed

whole baby bella Mushrooms, Washed And Stems Removed (save them for another recipe) Prep your ingredients by slicing onions thin and washing and taking stems off mushrooms.
I also added some diced up marinated
organic baby bella mushrooms, bc they're meaty and moist, and since some comments said «bready» or «dry» I figured this would be a great resolution.
I used a pound of
mini baby bella mushrooms, but if you're not too crazy about them, feel free to only use 8 ounces of mushrooms.
