back on track, I made this hearty
Pumpkin Pie Oatmeal with stone ground oats, quinoa, and tons
of healthy
toppings.
Generously salt and pepper the inside
of the
pumpkin, pop the
top back on it, place it on a rimmed baking dish (since the
pumpkin may leak or weep a bit), and bake for 45 minutes.
Sprinkling 1/8 teaspoon
of either ground cinnamon, apple /
pumpkin pie spice or a Chai blend, on the cranberries before placing the
tops back on, would all work nicely too!
Sprinkle the sea salt,
pumpkin seeds and cranberries on
top and lightly press into the mixture with the
