One of the few cakes that you can
bake in a microwave oven — using semolina (rava), banana and coconut milk.
There is a version, not posted here, that you can rise and
bake in a microwave oven, as well as versions for bread machines.

This recipe works well divided into 9 muffins, which I like, so that I can
bake it
in my
microwave sized countertop
oven (I overlap a pair of 2 × 3 muffin pans to make a 3 × 3) and not heat up the kitchen as much as the regular, big, under - the - stove one would.
For those of you that may not have a
microwave, I included some tips for
baking the muffins
in the
oven.
If you don't want to use a
microwave, you can
bake your sweet potatoes

Start by cooking the sweet potato by either
microwaving on high for 7 - 8 minutes or
baking in the
oven at 400 °F for about an hour.
You can
bake it
in the
oven or
microwave, and then mash before measuring.
