There are just a few baked goodies that instantly remind me of her including shortbread (made into little thumbprint cookies with a piece of maraschino cherry on top), an incredible chocolate cake that was made with zucchini (and yes I knew about it!

We've gotten tomatoes and cucumbers, but I'm still waiting for someone to drop off loads of zucchini so I can bake up some zucchini bread and a zucchini cake!

Why does the picture of the Chocolate Zucchini Loaf show it as being baked in a «loaf» (bread) pan but the instructions say to bake it in a 9 X 13 rectangle «cake» pan?

Enjoy it with baked corn chips, or scoop it up with celery sticks, raw zucchini wedges, or rice cakes.

I personally like to use a blend of quinoa flour, almond flour, and coconut flour to get a lower starch content and higher protein and fiber content in my baked goods (plus to make sure the recipe is gluten - free)-- this combo of 3 flours is AMAZING in banana bread, zucchini bread, or carrot cake bread or muffins, but will work with anything if you use your creativity in baking.

After years of baking with whey protein and perfecting countless recipes (from birthday cake protein blondies and chocolate protein cake to chocolate chip protein cookies and peanut butter oatmeal protein cookies, from fudge zucchini protein brownies you can eat in one sitting to the most perfect baked protein cinnamon rolls)... plus so many other recipes I am extremely proud of... it's time for a new challenge.
