These do need to be
baked at a high heat to crisp them up, but you also have to keep a very close eye on them.

Because it is very stable
at high heat, it is considered one of the best oils for
baking, sautéing and deep fat frying.
Why do these
bake at such a
high heat?
If you want to
bake them, I would do it
at a
high heat, 400 or so, to make sure they get properly crusty without drying out.
Add water
at the base of the dish and
bake in oven
at high heat for about an hour.
You could also add red pepper flakes, garlic (though this is slightly risky as it can burn
at high heat), lemon zest or Parmesan before
baking, or top the roasted asparagus with breadcrumbs and / or Parmesan, Feta or goat cheese.
I should mention here that the Naan
baked on the pre
heated pizza stone
at very
high temperature, comes closest to the Naan made in the tandoor.
Note that these will have a
higher resistant starch content if you dehydrate them, but you could also
bake at very low
heat (less than 130 °F).
I also recommend cooking these
at medium or slightly above, the
higher heat works with the
baking powder in the batter to provide a second rise.
It is ideal for cooking and
baking because it does not oxidize
at high heats, as many other oils do.
Light saute cooking with olive oil
at temperatures no
higher than 200 - 250F seem to be safe and minimally damaging, but oven
baking or
higher heat cooking on the stovetop with olive oil is not wise given that there are much hardier and less expensive fats to choose from like expeller pressed coconut oil or palm oil!
In fact it can help your body burn fat, support healthy joints, skin, and brain function, and is stable
at high heats for frying /
baking.
Cover tightly with heavy tinfoil (shiny side in); poke a couple of steam release small holes in the tinfoil and
bake at medium
high heat (350 - 375 F) for about a half hour.
