While we were walking around and admiring all of the stands we picked up a few eggplants and some fresh
baked focaccia bread to make Eggplant Parmesan later that night.It was the perfect morning for walking around and exploring the market.
A little while later my father went out and returned with some freshly
baked focaccia bread, tomatoes, mozzarella, and a bunch of arugula he foraged from Whole Foods.

The
Focaccia bread is already
baked and can be eaten directly out of the bag.
Nothing wrong with that, but
baking with whole spelt flour does add nice texture and makes the
bread a lot more satisfying as a part of a meal, even if it doesn't make a
focaccia quite as tender and airy.
Finding yourself full before the salad appears on the table really isn't anything to brag about, but sometimes warm fresh -
baked biscuits,
focaccia or crusty sliced
bread is too hard to resist.
I've only made pizzas on our stone so far, but I've read that scones and some
breads like
focaccia can be wonderful
baked on a stone.
If you are planning to consume the
focaccia bread immediately, you can add the cheese during the last 5 minutes of
baking.
