I used buckwheat instead
of brown rice flour, and we didn't have
baking powder / bicarb but the
cookies still turned
out great!
When you're ready to make the
cookies, just take the dough
out of the fridge, let it sit for a few minutes, and then
bake as usual.
Scoop the
cookies out onto the
baking sheets (I use a 2 - inch
cookie scoop, which is about 1 1/2 tablespoons
of dough).
I actually
baked in the oven on a cooling rack on top
of a
cookie sheet and the chicken came
out nice and crunchy.
Before
baking, I like to top my
cookies with a few extra chunks
of chocolate and a sprinkle
of flake sea salt, so they come
out of the oven picture perfect and ready to be devoured.
Also, they tend to spread
out quite a bit during the
baking process, so I decided to use about 1 1/2 tablespoons
of batter per
cookie, which yielded the best
cookies.
Once they are firm, place the
baking sheet in the center
of your preheated oven and
bake for 15 to 17 minutes, or until the
cookies are nice, uniform brown color — like they came right
out of that brown wax paper bag in that Nabisco box.
The
cookies may seem undone, but they will continue to
bake once
out of the oven.

But come Christmas, I had to
bake a few
cookies to get in the spirit
of the season and this one recipe that Epicurious kept posting on its Twitter feed at regular intervals just called
out to me.
So my task for this weekend is to hunker down in the kitchen, go through my
baking list and churn
out lots
of cookies!!
1) Sift self - raising flour into a large mixing bowl 2) Cut the butter into small cubes and mix it with the flour, using two knives to mix the butter and flour together 3) Once the dough achieves a sand - like mixture, use your hand to compact the dough and knead very gently 4) Sprinkle a cool, flat surface with flour, and flatten the dough with a rolling pin until it reaches a 1 cm thickness 5) Pre-heat oven to 190 — 200 deg cel 6) Use a round
cookie cutter (or a champagne glass) to cut
out small circles
of dough 7) Place dough circles on a greased and floured
baking tray 8)
Bake scones for 15 to 20 minutes or until they have turned golden brown on top 9) Once scones have cooled, cut them sideways into half 10) Mix chopped fresh chives and cream cheese together until they have integrated homogeneously 11) On each scone half, spread some cream cheese and chive mixture, then place a couple
of slices
of ham and cheese on top, then top with more cream cheese mixture and finally sprinkle with fresh chives
One thing I did with my second round
of baking was to flatten
out the little balls so they
cookies were less fluffy and more like a regular shaped
cookie.
Correction: most girls try
out new
cookie recipes, but I'm not allowed to because a few members
of the group are a little addicted to this recipe (fine with me: these are no -
bake and require 4 ingredients!).

Do wrap the sticky, ganache - like dough around the candy very well — or else the caramel may leak
out of the
cookie during
baking.
We cut

of dough and place them on a prepared
baking sheet, about 1 - inch apart (they will not spread during
baking).
These vegan gingerbread men
cookies are just as enjoyable a few days after they are
baked but best right
out of the oven.
I will test the recipes
out with less
baking soda to see if this reduces the chance
of the
cookies turning green.
When freezing, I boil first, let them dry off a bit (a wooden cutting board keeps them from sitting in puddles
of water; don't put on a
cookie rack — the thin metal cuts through the soft dough and all your fillings slurp
out), then freeze them on
baking sheets dusted with flour.
If
cookies puff up in the oven, tap the
baking sheet on the counter when you pull them
out of the oven to deflate them.
I took a frozen banana
out of the freezer (we save for smoothies when they get to dark to eat fresh) put a slice
of banana on each
cookie and then
baked for 9 minutes (I cooked 1 extra minute in my oven because
of the banana)
Use a smaller
cookie cutter to cut
out the centers
of half
of the
cookies on the
baking sheet.
I don't think there is a human on earth (adult, child, family, future spouse, MEEEE) not pleased when you can pull
out scoops
of chocolate chip
cookie dough (or our house favorite, Oatmeal Raisin with Chocolate Chunks) from the freezer, and
bake them as needed.
The tops should be almost set when you take the
cookies out of the oven — they'll continue
baking on the
cookie tray as they cool.
One thing's for sure: every single one
of these twelve Christmas
cookie recipes is sure to make your holiday season truly magical, so get
out your
baking ingredients and enjoy!
Something I've found that helps prevent tearing
of the dough (and leaking)-- I roll it
out and assemble the tart on the parchment paper that it's going to be
baked on — that way when I'm done, I can just pick the whole sheet up and plop it on a
cookie sheet instead
of trying to do it with a spatula or my hands.
