If you're cooking for two, use the recipe as written and divide the
rice pudding mixture between two smaller
baking dishes to create a lovely date night dessert for two.
Cover the
baking dish with foil, and
bake for 45 minutes to 1 hour, or until the meat and
rice is cooked through.
Add the remaining stock to the
rice, bring to a boil, and transfer to a deep glass
baking dish.
Layer in a lightly greased
baking dish starting with cooked
rice, mozzarella, meat mixture, tortilla chips, cheddar cheese and Monterey Jack cheese.
I
bake it all in one
dish and serve it with

In short, I tossed all the ingredients together in a big bowl, turned them out into a
