baking sweet rolls for a while, and now I have no excuse not to make some!

I do somehow think that even plain oatmeal (
rolled oats) and raisins or even the occasional
sweet baked sweet potato sometimes tastes really, really
sweet to me after not having regular sugar.
What worked for me was to make two 9 x 13 - inch
baking trays of
sweet rolls.
But the best part is the
sweet - and - savory coating: these babies get a
roll in a sugar - salt mix before going into the oven to caramelize and
bake.

I'm a scone — muffin —
sweet roll kind of girl at heart which is part of the reason why I love
baking so much.
All of these factors could have changed the way the dough rose, so you may want to consider them the next time you
bake a batch of
sweet rolls.
Green beans, broccoli, asparagus, a
baked sweet potato with cinnamon sugar, and a dinner
roll, all sans butter or cheese.
After the
rolls are nestled into a
baking pan, they can hang out, covered, in the refrigerator overnight and be
baked the next morning for a
sweet breakfast.
Not sure when I'll get around to
baking these, but I will as soon as possible, because I know I won't be able to get those
sweet rolls out of my mind until I put them in my mouth...
1/2 cup (2.75 ounces / 80 grams)
sweet rice flour (mochiko) 1/2 cup (2.5 ounces / 70 grams) buckwheat flour 1/2 cup (1.75 ounces / 50 grams) old - fashioned
rolled oats, plus an extra handful for the tops 1/2 cup (1.5 ounces / 40 grams) quick (baby) oats 1 teaspoon
baking soda 1/2 teaspoon fine sea salt (or 1/4 teaspoon if your almond butter is salted) 1 cup (8 ounces / 225 grams) smooth, unsalted almond butter 3/4 cup plus 2 tablespoons (8.5 ounces / 240 grams) maple syrup 6 tablespoons (2.5 ounces / 70 grams) melted but cool coconut oil 1 teaspoon vanilla extract 1 1/2 cups (8 ounces / 225 grams) coarsely chopped bittersweet chocolate (preferably 65 - 70 % cacao mass), plus some extra chunks for the tops flaky salt such as Maldon, for the tops (optional)
Although
sweet - pastry can be quite difficult to work with, (I have been many different methods for getting it into the tin nicely, but
rolling dough between two
baking sheets is the one definitely works the best for me) it is worth persevering and making your own pastry — these tarts are definitely worth it!
