I didn't used to bake bread before my son's CD diagnosis so I have nothing to compare baking gf bread to, but what I have learned is to half the recipe the first time — it may not come out exactly as planned but at least I can tell if it is worthwhile before using up a lot of ingredients.

Bring enough GF bread for the first few days (keep in the little tiny fridge / wet bar in the hotel room) and then make due with microwaved baked potatoes, rice from a Chinese restaurant, and lots of snacks like Poprice, cashew nuts, and potato chips.
