I stockpile over-ripe, frozen bananas in my freezer (I think that's a form of enabling) just
so that I can
bake banana bread whenever the
mood strikes me, as it did the moment I read about this sugar - topped coconut version.
I usually love going back to old favorites but I was in the

so I broke in Dorie Greenspan's «
Baking: From my home to yours» book that I got Jess for her birthday (oops!)

So these scones came to the rescue, as they always do when I'm in a
baking mood, or when I'm looking for an easy, crowd - pleasing little something to bring to a brunch.
Last weekend I was feeling in the

bake something... and put a post on my personal Facebook page asking what things people wanted «healthanizing»... billionaires shortbread got a mention (I'll try and get onto that before xmas) and
so did carrot cake.
Now, I don't eat sweets all that often anymore but for some reason I had a hankering for cinnamon toast... I had a freshly
baked loaf of Elana's Pantry Paleo Bread in the freezer that I could have easily doctored up to make cinnamon toast but I was in the
mood to experiment
so I decided to try to make some Cinnamon Swirl Raisin Bread.
Although were heading into spring, it hasn't exactly felt like spring yet to me
so I decided to try out a new vegan chocolate banana bread recipe because I was in a
baking mood and wanted something comforting.
I woke up this morning in the
mood to
bake and with
so many pomegranates on hand, I decided to make pomegranate scones.
