First, put 1/3 cup rolled oats, 4 egg whites, 1 teaspoon vanilla extract and 1/2
teaspoon baking powder in a blender and blend until smooth.
Take 2/3 cups of flax meal, 1/3 cup of almond meal, 1 1/2
tsp baking powder with salt and pepper to taste.
** If you can not find cream of tartar you can substitute 2 teaspoon of
baking powder in place of cream of tartar and baking soda.
I'd soak buckwheat flour with water and a little vinegar overnight and
add baking powder in the morning.

I didn't expect the cookies to be as light and fluffy as they are, especially
without baking powder but maybe it's all the citrus.

I like to use
baking powder because I find it a little more reliable than baking soda -LCB- which then requires the use of some form of acid -RCB-.
I did accidentally add

When I make them now I bulk them up with 2 Tbsp coconut flour and 1/2 tsp

I made these and they were too bitter, I think they would have been great with
