baking powder, or some sort of sourdough starter.
Possibly the

recipe was supposed to be soda; if I was going to fix the
recipe I would think about incorporating the unused egg whites.

My research tells me that self - rising flour includes 1 1/2 teaspoons
baking powder and 1/2 teaspoon salt for each cup of flour so using self - rising flour will almost double the leavening in this
