banana buckwheat recipe served as the vegan / gluten - free base, and in re-making it, I tried to streamline the recipe to make the process.
Next on my list of pancakes to try are buckwheat (

Place two thirds of your
buckwheat in a blender with the almond milk, chia seeds,
banana, blueberries, almond butter and honey / maple syrup (if you're using it).
I love stirring in manuka honey, slices of
banana and ground cinnamon as they all totally melt into the
buckwheat to make it so amazingly sweet and creamy, I then add almond milk for extra creaminess before stirring in some almond butter and baobab at the end.

So I thought I'd put my go - to breakfast of almond butter,
banana and dates (which I normally put on
buckwheat toast) into the blender and see what happened.
I eat mine with
buckwheat pancakes and
bananas.
I used a
banana instead of the dates and gluten free flour in place of the
buckwheat.
I made it again today into 24 mini muffins (baked for 7 mins) and 10 regular - sized muffins (baked for 18.5 mins) with some minor changes: added an extra
banana, used a mix of half dark
buckwheat flour and half white whole wheat flour; decreased brown sugar to 1/4 cup (it was all I had); and used 1/4 cup of maple syrup.
And the third is made with
buckwheat groats, oats, coconut, flaxseed,
banana, peanut butter (100 %), cacao powder, cinnamon, dates, almond milk and muesli.

We need a little bit of flour to tighten up the batter — I almost always use
banana flour, but if you have trouble finding it, oat flour,
buckwheat, and chickpea flour should all work great here, too.
I do like
banana pancakes, but I normally make them with oat or
buckwheat flour.

I made these yesterday and they turned out beautiful.my tiny modifications: I have used plain flour instead of
buckwheat, a mixture of milk and plain yoghurt instead of buttermilk and added 1/2 a
banana more, I used the olive oil and not the butter.
the nutty taste of
buckwheat aligns perfectly with the
banana flavor.
I just love
buckwheat flour lately as a more accessible, still totally gluten free option than
banana flour, which is my other favorite!
Next is some
buckwheat flour to bring everything together into a thick batter —
banana flour, oat flour, or chickpea flour would also work just fine.
Add rinsed
buckwheat, cashew milk, peanut butter and
bananas to a blender or food processor and pulse until desired texture.
