coconut - y and sweet with that cute quinoa crunch, all topped off with a delicious
combo of berries and
banana.
I mean, what's better - something a loved one made or something a stranger / machine made?That answer's easy & BTW this pie looks awesome —

combo!
The
bananas /
coconut combo is as sweet as I need....
3/4 C pineapple, chopped 2 other pieces seasonal fruit in any
combo: 1
banana, peach, pear or green apple, 2 large handfuls of berries, or 2 kiwis 6 - 8 oz vanilla Greek yogurt splash lime juice 1 C unsweetened almond milk 1/2 C
coconut water 2 Tbsp chia seeds
Usually I cook my oats in almond or
coconut milk and add
banana and berries most mornings but I thought I'd try a different flavour
combo this time.
1 flax egg (1 tbl of flaxseed meal or a flax / chia
combo + 3 tbl of water) 4 (3.5 for the recipe and 1/2 of
banana sliced to top each muffin) medium ripe
bananas 1 tbl baking powder 1 tsp baking soda 1/2 tsp almond extract 1/4 cup
coconut sugar 2 1/2 (38 ml) Tbsp maple syrup 3/4 tsp sea salt (I used pink Himalayan) 2 tsp ground cinnamon 3/4 cup unsweetened plain almond milk 1.25 almond flour 1.25 cup gluten - free flour blend (I used Bob's Redmill 1:1 flour) 1.25 cups of gluten - free oats 1 cup chopped walnuts or vegan chocolate chips
I threw a
banana into the mix, only because the
combo of
coconut and avocado seemed a bit heavy.

I personally like to use a blend of quinoa flour, almond flour, and
coconut flour to get a lower starch content and higher protein and fiber content in my baked goods (plus to make sure the recipe is gluten - free)-- this
combo of 3 flours is AMAZING in
banana bread, zucchini bread, or carrot cake bread or muffins, but will work with anything if you use your creativity in baking.
If you are low on the sweet fruits and your kids are needing it sweeter, you can add a little pure vanilla extract (especially good with mango /
banana /
coconut / creamy
combos).
My favourite
combos besides this one are blueberries and
banana, almond butter and raw cacao powder, maca and kiwi, heated raspberries and
coconut.
These
combos definitely skew more gourmet: Think toasted
coconut key lime pie, chocolate - drizzled
bananas foster, and peachy maple pecan.
