Being inspired by a recipe I saw for no bake cookies that used
a banana in place of butter, I decided to try my hand at creating a healthier version of our family recipe.

Place two thirds
of your buckwheat
in a blender with the almond milk, chia seeds,
banana, blueberries, almond
butter and honey / maple syrup (if you're using it).
If you love the combination
of chocolate, peanut
butter and
bananas, you're
in the right
place.
In place of toast with peanut
butter and sliced apples or
bananas on top.
I'm going to make these tomorrow, using Sunbutter
in place of peanut
butter and a
banana instead
of the eggs.
To make the
banana filling, first gently melt the coconut oil and cacao
butter by
placing it
in a heatproof bowl over a pan
of steaming water with the heat turned off (see notes below).
Place 2
of the
bananas in a blender or food processor with the milk, vanilla, vinegar, almond
butter and date juice concentrate.
I made them with the coconut sugar — not a big fan
of the
banana taste when using them
in place of butters.
Right now there are two options, 1) you can
place the sliced
banana onto the peanut
butter, cover the sandwich and eat it cold, OR 2) melt a teaspoon
of yogurt spread or margarine
in a frying pan and add the
banana slices one at a time so they are spread out then dust with cinnamon.
You can use these little bites
in place of granola if you please, eat them like cereal (something I think would simply be a must - try), snack on them as they are, use them on top
of smoothies, add them to some yogurt like coconut yogurt, or layer with some nut
butter or choice and maybe a
banana to make little mini sandwiches.

bananas to replace oil all the time... I can't believe I never thought to «cut
in» cold
banana slices
in place of butter.
