I love cashew -
based mac and cheese but sometimes that can get expensive!
I can't call it healthy, but it has certain ingredients that actually make it a better choice than a traditional, cream -
based mac and cheese.
While
the base mac and cheese recipe is made on the lighter side as - is, this easy comfort food can be made even healthier with the addition of broccoli to become Broccoli and Cheddar Mac and Cheese!

There are many plant -
based versions of
mac and cheese, but this recipe, is by far my favorite variation.
When I first went all plant -
based,
mac and cheese was one of those food groups — yes,
mac &
cheese is in a category all its own in my mind ---LSB-...]
This
mac and cheese spin is
based off of the traditional pasta dish, Tortelli di Zucca — it's a large ravioli - like pasta stuffed with a pumpkin

I'm calling this a gratin because it's
based off of my Brussels Sprout Quinoa Gratin, but you could also refer to it as a casserole, a variation of
mac and cheese,
and maybe even a hotdish (straight - up Minnesota talk, don't ya know).

In recent years, recipes have also been plant -
based and largely gluten - free, but don't let that scare you off — unless you're afraid of peanut butter cup pie or garlic

cheese!
So you can go from the perfect

mac and cheese to saving the leftover sauce for nachos later in the week.
One of the fun things about vegan «
mac and cheese» is that because it's already such a departure from the original dish, you can put lots of different spins on it with different
base ingredients in the sauce.
Using potatoes as the
base and a good dose of spice, this
cheese will be good as a
