I think this weird
pesto obsession is
coming from a longing for summer...
basil always makes me think of summer, and sun, and the beach, and a refreshing pool with a tropical drink...
Several years ago, my Aunt Teena
came to me with a jar of
pesto sauce and a jar of tomato
basil sauce, told me to combine them and make some bruchetta for the family reunion dinner we were having that night.
Unfortunately I don't have as wonderfully forgetful friends as you and hardly ever fresh stuff lying around except for my eleventy seventh
basil crop this year:) I have been hankering for some
pesto and also had some frozen spinach calling my name and along
comes your recipe.
To
come up with the recipe, I simply based myself off of my
basil pesto and threw in some kale.

pesto is definitely one of my favorite things to make and we had just
come back from a trip to Italy and somehow just were
pesto crazed and so we wanted to include an Asian twist to it and the Italian version of it was made with
basil and pine nuts and this one uses the cilantro as the base.
